Stacked eggplants as binders: scandalous filling between tidy edges.

Large flat eggplant slices, filled with a sharp feta-walnut mixture, stacked like binders in a cabinet. Tidy outside, but each cut reveals a spicy, bold interior. The folder stack refers to the searched office files of the European Parliament.

Ingredients

  • 2 large eggplants
  • 200 g feta cheese
  • 80 g walnuts
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 tsp lemon zest
  • 2 tbsp chopped parsley
  • Pepper to taste
  • 1 red bell pepper

Method

  1. Preheat the oven to 200°C.
  2. Slice the eggplants lengthwise into slices about 1 cm thick.
  3. Brush the slices with olive oil and roast for 15 minutes on baking paper until soft.
  4. Meanwhile, finely chop the walnuts and mix with crumbled feta, minced garlic, lemon zest, parsley, and pepper.
  5. Cut the bell pepper into wide strips.
  6. Remove the eggplant slices from the oven, let cool briefly.
  7. Top half the slices with the feta mixture, cover with a second eggplant slice.
  8. Stack the stuffed eggplants like binders, upright or slightly slanted, on a platter.
  9. Place the bell pepper strips as 'tabs' on the side of the stack.

Serving notes

  • Serve on a sleek rectangular platter for the archive effect.
  • Sprinkle extra parsley for a fresh touch.
