Sydney-Munich Skyline Salad

A vibrant skyline salad nodding to the swapped stadiums on the marathon medal.

A festive salad served on a large oval platter like the marathon medal: at the bottom, three halved hard-boiled eggs with a criss-cross pattern for the Allianz Arena, above that a colorful skyline of vegetables and croutons. Celebrate the marathon and the ‘mix-up’ on your plate.

Ingredients

  • 200 g mixed lettuce (rocket, little gem, lamb’s lettuce)
  • 1 cucumber
  • 2 red bell peppers
  • 250 g cherry tomatoes (yellow and red mixed)
  • 1 red onion
  • 150 g feta cheese
  • 3 large eggs
  • 100 g croutons
  • 2 tbsp pumpkin seeds
  • 4 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1 tsp mustard
  • salt and pepper

Method

  1. Boil the eggs for 8 minutes until hard, cool in cold water, and peel.
  2. Cut the eggs in half and place them at the bottom of a large oval platter, cut side up, in a row with points facing the center. Carefully score a criss-cross pattern into the yolk to mimic the Allianz Arena.
  3. Wash and dry the lettuce. Mix rocket, little gem, and lamb’s lettuce, and spread them over the platter above the eggs.
  4. Slice the cucumber into half-moons, peppers into strips, cherry tomatoes into quarters, and red onion into thin rings. Arrange the vegetables in horizontal layers above the eggs to form a skyline.
  5. Crumble the feta and scatter as ‘clouds’ above the skyline.
  6. Mix olive oil, lemon juice, honey, mustard, salt, and pepper for a dressing and drizzle over the salad.
  7. Scatter croutons and pumpkin seeds as ‘fireworks’ on top.
  8. Serve immediately.

Serving notes

  • Serve on a large oval platter for the medal effect.
  • Arrange the eggs neatly in a criss-cross pattern at the bottom as an Allianz Arena nod.
  • Let everyone take a piece of the ‘skyline’.
