T. rex Track Stew

Beef stew with peppers, served as four giant T. rex footprints in a row.

A spicy beef stew with peppers, plated as four giant three-toed footprints in a row. Each print is made from stew, mashed potatoes, and charred pepper, so it looks like a T. rex just walked across your plate.

Ingredients

  • 900 g beef stew meat
  • 2 large onions
  • 3 cloves garlic
  • 2 red bell peppers
  • 2 green chili peppers
  • 2 tbsp tomato paste
  • 500 ml beef stock
  • 800 g floury potatoes
  • 50 ml milk
  • 30 g butter
  • 2 tbsp olive oil
  • 1 tbsp smoked paprika powder
  • salt and pepper to taste

Method

  1. Cut the beef into chunks. Peel and chop the onions. Finely chop the garlic.
  2. Heat olive oil in a large stew pot. Brown the meat on all sides.
  3. Add onion, garlic, paprika powder, and tomato paste. Fry for 2 minutes.
  4. Slice the red bell peppers into strips. Slice the green chilies into rings.
  5. Add bell pepper, green chili, and stock. Bring to a boil, then simmer covered for 2.5 hours.
  6. Peel the potatoes, boil until tender in 20 minutes. Drain, mash with milk and butter. Season with salt and pepper.
  7. Roast the remaining red bell pepper under the grill until charred, peel, and cut into wide strips.
  8. On four large plates, shape a big oval 'footprint' of stew. Attach three 'toes' of mashed potato to each. Lay a charred pepper strip on each toe for the claw effect.
  9. Repeat until you have four prints in a row, as if the T. rex walked across the plate.

Serving notes

  • Serve with extra hot peppers on the side for the brave.
  • Dust smoked paprika around the prints for a dusty effect.
