A solemn starter shaped like the ICC judges’ bench.

A formal starter: a rectangle of beef carpaccio, bordered with capers and Parmesan, referencing the International Criminal Court’s judges’ bench. The arrangement honors the solemnity of the news about the Sacharov Prize.

Ingredients

  • 300 g beef loin (carpaccio, sliced)
  • 60 g arugula
  • 4 tbsp capers
  • 40 g Parmesan cheese (shaved)
  • 2 tbsp extra virgin olive oil
  • 1 lemon
  • Salt and pepper to taste

Method

  1. Place a rectangular sheet of plastic wrap on each plate.
  2. Arrange the carpaccio slices into a neat rectangle (about 12 x 20 cm per plate).
  3. Carefully remove the wrap so the carpaccio stays in shape on the plate.
  4. Line the long sides of the rectangle with capers, representing the bench seats.
  5. At the short side, arrange a row of Parmesan shavings, as symbolic gavels.
  6. Place a narrow strip of arugula in the center, as a green runner.
  7. Drizzle with olive oil, a bit of lemon juice, salt, and pepper.
  8. Serve immediately to preserve the clean shape.

Serving notes

  • Serve on large white plates for a formal look.
  • Keep the rectangle exactly centered on the plate.
