Tension Meter Parfait

Parfait bars as a voting chart: sharp and sour fight for the win, just like in Sweden.

A neatly layered parfait shaped like a glowing voting bar: two rows of pink and yellow bars, slanted like a neck-and-neck race. Sharp lemon and tart raspberry clash, with a zesty crunch. You read the election tension on your plate.

Ingredients

  • 300 ml whipping cream
  • 3 eggs
  • 100 g sugar
  • 1 lemon (zest and juice)
  • 100 g raspberries (fresh or frozen)
  • 2 tbsp raspberry jam
  • 100 g ladyfingers
  • 2 tbsp lemon syrup
  • 1 tbsp water
  • 2 tbsp granulated sugar
  • 1 tbsp lemon zest
  • 1 tbsp roughly chopped pistachios

Method

  1. Line a 20 cm loaf tin with baking paper.
  2. Separate the eggs. Beat the yolks with 80 g sugar until fluffy.
  3. Whip the cream until stiff.
  4. Divide the yolk mixture over two bowls.
  5. In bowl 1: add lemon zest, lemon juice, and lemon syrup.
  6. In bowl 2: add pureed raspberries and raspberry jam.
  7. Whip the egg whites with 20 g sugar until stiff.
  8. Fold half the cream and half the egg white into each bowl.
  9. You now have two parfait mixtures: lemon and raspberry.
  10. Break the ladyfingers into equal strips of about 7 cm.
  11. In the tin, alternate rows of lemon parfait and raspberry parfait, placing them diagonally to create a voting bar chart. Alternate until filled.
  12. Insert halved ladyfingers between the rows as bar dividers.
  13. Cover and freeze for at least 4 hours.
  14. Make the crunch: mix pistachios, lemon zest, and granulated sugar.
  15. Turn out the parfait onto a board and cut into thick bars.
  16. Sprinkle with the crunch and serve immediately.

Serving notes

  • Serve the bars diagonally on the plate, like two competing voting bars.
  • Garnish with extra lemon zest for a sharper touch.
