Potato and zucchini layers stacked like a treehouse: comforting, warm, and a wink to the crazy treehouse series.

A warm oven bake of layered potato, zucchini, and cheese, built as a treehouse with several floors. On the plate, you see treehouse towers: stacked slices, with a chive stem as a ladder. A comforting side dish for difficult times, nodding to the crazy treehouse books.

Ingredients

  • 600 g waxy potatoes
  • 2 zucchinis
  • 1 red bell pepper
  • 100 g grated cheese
  • 2 tbsp olive oil
  • 1 onion
  • 2 cloves garlic
  • 1 tsp thyme
  • pinch pepper and salt
  • 4 chive stems

Method

  1. Preheat the oven to 200°C.
  2. Peel the potatoes and slice into thin rounds.
  3. Slice the zucchinis into 1 cm thick rounds.
  4. Chop the onion and finely chop the garlic.
  5. Heat the olive oil in a frying pan, sauté onion and garlic until translucent.
  6. Slice the bell pepper into strips.
  7. Grease an oven dish. Build the treehouse: stack alternating potato and zucchini slices (3-4 layers per tower), adding some onion, garlic, and bell pepper between layers.
  8. Repeat until you have 3-4 towers per person (12-16 total).
  9. Sprinkle with thyme, pepper, and salt.
  10. Top the towers with grated cheese.
  11. Bake 25-30 minutes until golden and cooked through.
  12. Insert a chive stem in each tower as a ladder.

Serving notes

  • Serve on a large platter, towers grouped like a treehouse.
  • Add a spoonful of soft cream cheese as a dip.
