A solemn salad arranged as a long, rectangular meeting table: cucumber slices form the table, twelve halved eggs as states around it, and a central tomato 'chair'. The dish refers to the oversight committee and the settling states.

Ingredients

  • 2 large cucumbers
  • 12 eggs
  • 1 large beef tomato
  • 150 g mixed salad leaves (e.g., lamb's lettuce, arugula)
  • 100 g feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 1 teaspoon mustard
  • salt and pepper

Method

  1. Boil the eggs for 8 minutes until hard, cool under cold water, peel, and halve lengthwise.
  2. Slice the cucumbers into long, straight strips about 0.5 cm thick. Arrange them tightly together as a rectangle in the center of a large platter: this is the 'table'.
  3. Wash and dry the salad leaves. Arrange a border of salad around the cucumber table.
  4. Place the 12 halved eggs evenly along the long sides of the cucumber table, yolk facing up.
  5. Slice the beef tomato into thick rounds and place one slice centrally at the head of the table, as chair.
  6. Crumble the feta over the cucumber table.
  7. Whisk olive oil, vinegar, mustard, salt, and pepper into a dressing. Drizzle over the salad.
  8. Serve immediately so the arrangement stays visible.

  • Serve on a large rectangular platter for the best committee table effect.
  • Let everyone take a seat at the table by choosing an egg half.
