Neatly stacked but with a sharp, spicy filling: this salad reveals its secrets only when opened.

A neatly arranged salad with two stacked rows of cucumber and ham, mimicking file drawers with a 'secret' filling of pickle and mustard. Polished on the outside, with a sharp bite inside. The silhouette of two open drawers refers to the searched offices in the news.

Ingredients

  • 2 large cucumbers
  • 8 slices cooked ham
  • 4 medium pickles
  • 2 tablespoons wholegrain mustard
  • 100 g mixed salad greens
  • 1 red onion
  • 2 tablespoons mayonnaise
  • 1 tablespoon white wine vinegar
  • black pepper, to taste
  • salt, to taste

Method

  1. Wash the cucumbers and slice lengthwise into strips about 0.5 cm thick.
  2. Slice the pickles in half lengthwise.
  3. Mix the mustard with mayonnaise and vinegar into a dressing.
  4. Cut the red onion into thin half rings.
  5. On each plate, lay a base of mixed salad greens.
  6. Create two 'drawers' by laying three or four cucumber slices side by side, then a slice of ham on top.
  7. In each 'drawer', place half a pickle and some onion rings, drizzle with the mustard dressing.
  8. Cover with another layer of cucumber slices, leaving one side slightly open so the filling is visible.
  9. Repeat for the second drawer below, stacking them slightly offset for the drawer effect.
  10. Sprinkle with pepper and salt to taste.

Serving notes

  • Serve the salad on a rectangular platter for the file drawer effect.
  • Let the filling peek out slightly for the scandalous touch.
