Four bruschetta lined up as the front row seats at the fashion show: sleek, solemn, ready for a new chapter.

A sleek starter: four upright bruschetta on black slate, mimicking the front row seats at a fashion show. Fits the news: the first ‘outsider’ on Armani’s front row, solemn and stylish.

Ingredients

  • 1 baguette
  • 100 ml extra virgin olive oil
  • 2 cloves garlic
  • 200 g ricotta
  • 1 lemon (zest and juice)
  • 12 pitted black olives
  • 1 box cress
  • salt and pepper

Method

  1. Preheat the oven to 200°C.
  2. Cut the baguette diagonally into 8 thin slices.
  3. Brush the slices with olive oil and roast them for 8 minutes until golden brown.
  4. Rub the warm bruschetta with half a garlic clove.
  5. Mix the ricotta with lemon zest, half a tablespoon of lemon juice, salt, and pepper.
  6. Slice the olives into thin rings.
  7. Spread a layer of ricotta mixture on each bruschetta.
  8. Top each bruschetta with three olive rings and some cress.
  9. Place four bruschetta upright on each plate, neatly in a row, like seats at a catwalk.

Serving notes

  • Serve on a black slate or rectangular plate for a catwalk effect.
  • Keep the bruschetta upright to maintain the seat silhouette.
