A salad as a money flow: sharp, tangy and visually like a multimillion transfer.

This salad depicts a money transfer: green beans as arrows diagonally across the plate, with lemon 'coins' and red chili for tension. The flavors are sharp and tangy, just like the news. The lines refer to the international route of the missing money.

Ingredients

  • 400 g green beans
  • 2 red bell peppers
  • 1 red onion
  • 2 lemons
  • 1 red chili pepper
  • 100 g feta cheese
  • 2 tbsp capers
  • 4 tbsp extra virgin olive oil
  • 2 tbsp white wine vinegar
  • salt and pepper

Method

  1. Trim the green beans, cook for 5 minutes until al dente and rinse with cold water.
  2. Slice the bell peppers into thin strips and the red onion into half rings.
  3. Slice 1 lemon into thin rounds (for the 'euro coins'), juice the other lemon.
  4. Slice the red chili into thin rings.
  5. Mix olive oil, lemon juice, white wine vinegar, salt and pepper for a dressing.
  6. Mix beans, peppers, onion and capers with the dressing.
  7. Arrange the green beans diagonally in parallel lines across the plate, like a money transfer.
  8. Place lemon slices as 'coins' between the lines, scatter chili rings for tension.
  9. Crumble feta over everything.

Serving notes

  • Serve on a large flat plate to keep the lines visible.
  • Offer extra lemon wedges on the side for those who like it tangier.
