Two flavors cross paths on the plate: a salad that mirrors the tension in the news.

Ingredients

  • 2 medium raw beets
  • 1 cucumber
  • 100 g arugula
  • 200 g feta cheese
  • 1 red onion
  • 2 tbsp capers
  • 4 tbsp olive oil
  • 2 tbsp white wine vinegar
  • 1 tbsp honey
  • 1 tsp coarsely ground black pepper
  • salt to taste

Method

  1. Boil the beets for 40 minutes in their skins, let cool, peel, and cut into long thin strips.
  2. Slice the cucumber into long ribbons with a peeler.
  3. Cut the red onion into thin half rings.
  4. Mix olive oil, white wine vinegar, honey, pepper, and salt into a dressing.
  5. Place the arugula as a base on a large platter.
  6. Lay the beet strips diagonally from top left to bottom right, and the cucumber ribbons from top right to bottom left, crossing in the center as an X.
  7. Scatter the red onion, feta, and capers over the salad.
  8. Drizzle with the dressing just before serving.

Serving notes

  • Serve on a rectangular platter for a clear X-shape.
  • Keep the crossing of the strips central on the plate for visual impact.
