Ingredients

  • 4 large chicken fillets (approx. 800 g total)
  • 600 g waxy potatoes
  • 2 zucchinis
  • 12 green asparagus spears
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon paprika powder
  • 1 teaspoon dried thyme
  • salt and pepper to taste

Method

  1. Preheat the oven to 200 °C.
  2. Peel the potatoes and cut them into long, rectangular slices about 1 cm thick.
  3. Slice the zucchinis into long, straight strips about 0.5 cm thick.
  4. Place the potato and zucchini slices on a baking tray, drizzle with 1 tablespoon olive oil, salt, and pepper. Roast for 25 minutes until golden and cooked.
  5. Trim the woody ends from the asparagus and blanch them for 2 minutes in boiling water. Rinse with cold water.
  6. Mix the chicken fillets with 1 tablespoon olive oil, lemon juice, paprika, thyme, salt, and pepper. Grill in a grill pan or bake in the oven for 15-18 minutes until cooked through.
  7. On each plate, arrange a rectangle of potato and zucchini slices as a table. Place two chicken fillets upright on each long side as 'negotiators.'
  8. Lay three green asparagus spears side by side in the center of the table as 'files.' Repeat for each plate.
  9. Serve immediately, neatly and formally arranged.

Serving notes

  • Serve on a large white plate for maximum table effect.
  • Sprinkle extra thyme over the 'files' for a formal touch.
