The New Middle Lane

A solemn main dish with a recognizable vegetable middle lane: the new center line on your plate.

A solemn main course: a long, straight line of grilled vegetables and potato wedges forms a clear center lane on the plate, flanked by red beet on the left and white cabbage on the right. The silhouette represents the political middle lane that is missing in Berlin, according to the news.

Ingredients

  • 600 g baby potatoes
  • 2 zucchinis
  • 2 red bell peppers
  • 2 parsnips
  • 1 large cooked beetroot
  • 1/4 white cabbage
  • 2 tbsp olive oil
  • 1 tsp smoked paprika powder
  • salt and pepper
  • fresh parsley for garnish

Method

  1. Preheat the oven to 200°C.
  2. Cut the baby potatoes into wedges, the zucchinis into long strips, the parsnips into sticks, and the bell peppers into wide strips.
  3. Toss the potato wedges, zucchini strips, parsnip and bell pepper with olive oil, paprika powder, salt, and pepper.
  4. Spread the vegetables on a baking tray and roast for 25-30 minutes until golden and cooked through.
  5. Slice the beetroot into half-moons and the white cabbage into thin strips.
  6. Briefly heat the beetroot in a pan or microwave, blanch the cabbage for 2 minutes in boiling water and drain.
  7. On each plate, create a long, straight central lane with the roasted vegetables and potato wedges.
  8. Place the beetroot on the left and the white cabbage on the right of the lane, in neat lines, so the whole forms a middle lane with pronounced flanks.
  9. Garnish with finely chopped parsley.

Serving notes

  • Serve on rectangular plates for an extra strict effect.
  • Keep the central lane straight and clear, with sharply separated flanks.
