The Nobel Pouch

A festive salad shaped like an open money pouch, filled with golden eggs and minty greens.

A generous salad with golden eggs and mint-green vegetables, arranged as an open money pouch. The ‘pouch’ refers to the increased Nobel Prize money, radiating festivity and generosity. Halved eggs and avocado represent coins, lettuce and cucumber form the pouch.

Ingredients

  • 2 little gem lettuces
  • 1 cucumber
  • 2 avocados
  • 6 eggs
  • 100 g sugar snaps
  • 100 g feta cheese
  • 8 yellow cherry tomatoes
  • 1 bunch chives
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • salt and pepper

Method

  1. Boil the eggs for 8 minutes, cool and peel them.
  2. Cut the little gem lettuces in half lengthwise and arrange the halves in a wide circle on a large platter, forming the open edges of a money pouch.
  3. Slice the cucumber into ribbons with a peeler and drape them over the lettuce halves as ‘fabric’ of the pouch.
  4. Halve the avocados, remove the pits and slice thinly. Place the slices inside the lettuce, as ‘minty coins’.
  5. Cut the eggs in half and place them in the center of the platter as ‘golden coins’.
  6. Briefly cook the sugar snaps, rinse with cold water and distribute them over the salad.
  7. Crumble the feta and sprinkle it as extra ‘value’ over the salad.
  8. Halve the yellow cherry tomatoes and place them playfully among the eggs and avocado.
  9. Mix a dressing from olive oil, lemon juice, honey, salt and pepper. Drizzle over the salad.
  10. Garnish with finely chopped chives as a ‘money cord’.
  11. Serve immediately, keeping the pouch shape visible.

Serving notes

  • Serve on a large round platter for maximum pouch silhouette.
  • Offer an extra bowl of ‘coins’ (halved eggs) on the side for extra festivity.
