The Premier's Cake

A neatly arranged Moroccan date cake shaped as a table with a single prominent chair at its head, symbolizing the new female prime minister. The cake is square, with a small round mousse as the chair, marking the leader's seat. Fitting for the news: a woman at the head of the table.

Ingredients

  • 200 g soft pitted dates
  • 150 g almond flour
  • 75 g unsalted butter
  • 2 eggs
  • 100 g dark chocolate (70%)
  • 50 g sugar
  • 200 ml heavy cream
  • 1 packet vanilla sugar
  • 1 tbsp orange blossom water
  • 2 tbsp honey
  • 1 pinch salt
  • 1 roll marzipan (white, approx. 100 g)

Method

  1. Preheat the oven to 180°C. Line a square baking tin (20x20 cm) with parchment paper.
  2. Roughly chop the dates and melt the butter. Mix dates, almond flour, butter, eggs, sugar, salt, and orange blossom water into a firm batter.
  3. Pour the batter into the tin and bake for 25 minutes. Let it cool completely.
  4. Melt the chocolate in a bain-marie. Whip the cream stiff with vanilla sugar and honey. Mix half the cream with the melted chocolate to make a light mousse.
  5. Cut the cooled cake into a neat square slice. Place a square piece on each plate as the 'table'.
  6. Shape a small, firm round 'chair' from marzipan and set it at the head of the table. Place a scoop of chocolate mousse on the chair as the 'seat'.
  7. Serve the remaining mousse in small dollops beside the table.

Serving notes

  • Dust lightly with powdered sugar for a solemn look.
  • Place the marzipan chair firmly against the cake for the silhouette.
  • Serve on a large, white plate for a clean effect.
