The Skydance Skyline

Stacked blocks of vegetables and chicken form the Skydance skyline: solemn, powerful, and clearly visible on the plate.

A solemn main course of stacked, precisely arranged blocks of grilled aubergine, courgette, and chicken fillet, forming the iconic skyscrapers of a media company. The silhouette refers to the new Skydance tower at CNN headquarters. A powerful plate for a major merger.

Ingredients

  • 2 aubergines
  • 2 courgettes
  • 4 chicken fillets (150-175 g each)
  • 2 red bell peppers
  • 1 lemon
  • 4 tbsp olive oil
  • 2 tsp smoked paprika powder
  • 1 tsp cumin powder
  • 2 cloves garlic
  • salt and pepper to taste
  • fresh parsley, chopped (2 tbsp)

Method

  1. Slice the aubergines and courgettes lengthwise into 1 cm thick slices.
  2. Cut the chicken fillets into rectangular pieces about 8x4 cm.
  3. Mix olive oil with paprika, cumin, pressed garlic, salt, and pepper.
  4. Brush the vegetables and chicken with the marinade.
  5. Grill the aubergine, courgette, and chicken on a grill pan or barbecue until cooked and nicely striped.
  6. Cut the bell pepper into wide strips and grill briefly.
  7. On each plate, stack three to four blocks: start with aubergine, then chicken, then courgette, alternating with bell pepper, to create a skyline.
  8. Grate some lemon zest over the towers and sprinkle with parsley.

Serving notes

  • Serve on white plates for a businesslike effect.
  • Drizzle some extra olive oil and lemon juice around for shine.
  • Arrange the towers at different heights, like a real skyline.
