Tense vegetable lines on tangy slaw: this salad smuggles suspense onto your plate.

Long strips of bell pepper and cucumber are laid in tight, parallel rows over a bed of tangy lime slaw, echoing the intercepted cocaine lines. The sharp and sour flavors keep the tension high.

Ingredients

  • 1 small pointed cabbage
  • 2 limes
  • 2 red bell peppers
  • 2 cucumbers
  • 1 red onion
  • 1 red chili pepper
  • 2 tablespoons rice vinegar
  • 4 tablespoons olive oil
  • 1 teaspoon sugar
  • salt and pepper

Method

  1. Slice the pointed cabbage into thin strips and place in a large bowl.
  2. Juice the limes and mix with rice vinegar, olive oil, sugar, salt, and pepper to make a dressing.
  3. Cut the red onion into half rings and the chili pepper into thin slices. Mix both into the cabbage slaw.
  4. Pour the dressing over the slaw and toss well. Let sit for 10 minutes.
  5. Cut the bell peppers and cucumbers into long, thin strips (julienne).
  6. Spread the slaw over a large flat platter.
  7. Lay the pepper and cucumber strips tightly, in parallel rows, over the slaw so the line pattern is clearly visible.

Serving notes

  • Serve on a large platter so the lines remain straight and unbroken.
  • Sprinkle extra red chili over the lines just before serving for added suspense.
