Ingredients

  • 2 cucumbers
  • 12 cherry tomatoes (red)
  • 100 g feta cheese
  • 1 red onion
  • 2 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tsp mustard
  • 1 tbsp finely chopped chives
  • salt and pepper to taste

Method

  1. Wash the cucumbers and cut them into long, straight strips about 1 cm wide and 10 cm long.
  2. Halve the cherry tomatoes.
  3. Cut the feta into 1 cm cubes.
  4. Peel the red onion and slice into thin rings.
  5. Mix olive oil, white wine vinegar, mustard, salt, and pepper into a dressing.
  6. On a large platter, arrange four rows of three cucumber strips upright next to each other to form a sturdy, rectangular post (2x6).
  7. At the top of the post, place a semicircle of tomatoes as the head of the post.
  8. Sprinkle the feta cubes in a straight line across the middle of the post.
  9. Arrange the onion rings as a thin band over the feta.
  10. Drizzle with dressing and sprinkle chives over for a fresh, precise finish.

Serving notes

  • Serve on a white platter for maximum neutrality.
  • Place the salad in the center of the table as a focal point.
