A salad with sharp, tangy flavors, built as a digital 'breach': a stacked arrow of cucumber and carrot slices pierces a halved avocado 'portal'. The whole refers to the AI hack on the Australian government site. The breach path is clearly visible and edible.

Ingredients

  • 2 cucumbers
  • 3 large carrots
  • 2 avocados
  • 150 g feta cheese
  • 1 red onion
  • 100 g arugula
  • 3 tbsp capers
  • 1 lemon (juice and zest)
  • 4 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tsp coarsely ground black pepper
  • salt to taste

Method

  1. Wash the cucumbers and carrots. Slice cucumbers diagonally into 1 cm thick pieces. Slice carrots diagonally into 0.5 cm thick pieces.
  2. Halve the avocados, remove the pit and skin. Place each half, hollow side up, on a large plate as a portal.
  3. Spread arugula as a base on the plate.
  4. Create a diagonal arrow by alternating cucumber and carrot slices, from the edge of the plate straight into the avocado portal. Let the arrow pass through the avocado hole.
  5. Slice the red onion into thin half rings. Crumble the feta. Scatter both over the salad.
  6. Mix lemon juice, zest, olive oil, white wine vinegar, pepper, and salt into a dressing. Drizzle over the salad.
  7. Scatter the capers for extra tang.

Serving notes

  • Serve the salad immediately so the arrow structure stays clear.
  • Set the avocado portals firmly so the arrow really 'breaches' them.
  • Give everyone a portion with a piece of the arrow and portal.
