Tunnel Trio Salad

Three filled vegetable tubes in a row: Berlin's spy tunnel, solemnly translated into a composed salad.

Neatly plated: three elongated tubes of cucumber and endive, filled with potato-egg salad, lie parallel on the plate. The arrangement directly refers to the rediscovered Berlin spy tunnel pipes. A solemn, understated salad with a sharp mustard dressing nodding to Cold War tension.

Ingredients

  • 2 large cucumbers
  • 4 heads of endive
  • 600 g waxy potatoes
  • 4 eggs
  • 2 tbsp smooth mustard
  • 6 tbsp mayonnaise
  • 2 tbsp white wine vinegar
  • 1 bunch chives
  • salt and pepper to taste
  • 4 radishes (for markings)

Method

  1. Peel the potatoes, cut into small cubes, and boil in salted water until tender. Drain and let cool.
  2. Boil the eggs hard (8 minutes), peel, and chop into small pieces.
  3. Mix potato, egg, mustard, mayonnaise, vinegar, finely chopped chives, salt, and pepper into a creamy salad.
  4. Cut the cucumbers lengthwise and scoop out the seeds with a spoon (keep the shell intact).
  5. Slice the endive heads lengthwise, carefully remove the hard core to make long 'boats'.
  6. Generously fill the cucumber and endive halves with the potato-egg salad.
  7. On each plate, lay out three filled 'pipes' in strict parallel: two cucumber halves, one endive half in between.
  8. Slice radishes thinly and place as 'end caps' on each tube.
  9. Serve immediately, optionally with extra chives sprinkled on top.

Serving notes

  • Serve on a large white plate for a clean effect.
  • Lay the 'pipes' exactly parallel for the tunnel silhouette.
  • Add extra radish slices to mark the tunnel ends.
