Salad as nuclear site: lentils, yellow eggs and olives as found uranium and graphite, with a sharp tangy twist.

A sharp, tangy salad on a large round platter mimicking a satellite image of a dug-up nuclear site: grey lentils as earth, bright yellow pickled eggs as uranium barrels, graphite-black olives as storage, with red onion and lemon for tension. The edible markers represent discovery locations.

Ingredients

  • 300 g puy lentils
  • 4 eggs
  • 4 tbsp white wine vinegar
  • 1 tsp turmeric
  • 2 red onions
  • 2 lemons
  • 80 g black olives, pitted
  • 1 cucumber
  • 1 red bell pepper
  • 4 tbsp olive oil
  • 1 tsp coarsely ground black pepper
  • 1 tsp salt
  • 1 bunch flat-leaf parsley

Method

  1. Cook the lentils according to package instructions, drain and let cool.
  2. Boil the eggs hard for 8 minutes, peel and halve them.
  3. Mix 2 tbsp white wine vinegar with turmeric and 100 ml water. Soak the egg halves in this for at least 15 minutes until yellow.
  4. Slice the red onions into half rings and marinate with 2 tbsp white wine vinegar and some salt.
  5. Dice the cucumber and slice the bell pepper into strips.
  6. Mix lentils, cucumber, bell pepper, olive oil, juice of 1 lemon, pepper and salt into a salad.
  7. Spread the lentil salad on a large round platter.
  8. Arrange the yellow eggs as 'uranium barrels' in three spots.
  9. Place clusters of black olives as 'graphite storage' in two other spots.
  10. Garnish with marinated onion and roughly chopped parsley.
  11. Serve with lemon wedges for extra tang.

Serving notes

  • Serve on a large round platter so the layout looks like a satellite image.
  • Make sure the yellow eggs and olives stand out as clear clusters.
  • Offer extra lemon wedges for those who want more tangy tension.
