Visa Pause Tartare

A sharp tartare on toast, like a visa stamp row suddenly cut off.

A sharp, tangy steak tartare on a row of crisp toasts, mimicking a line of visa stamps in a passport. The broken row refers to the global visa halt: the plate is left empty halfway. Tension on the plate, two flavors pulling together.

Ingredients

  • 400 g beef steak (sirloin or tenderloin)
  • 2 shallots
  • 2 tbsp capers
  • 2 tbsp pickles, finely chopped
  • 2 tbsp wholegrain mustard
  • 1 tbsp Worcestershire sauce
  • 2 egg yolks
  • 4 tbsp olive oil
  • 1 lemon (juice)
  • 8 slices sturdy white bread (preferably unsliced)
  • 1 clove garlic
  • Salt and freshly ground black pepper

Method

  1. Cut the bread into 8 long rectangles (about 10 x 4 cm). Toast until golden brown in the oven or toaster.
  2. Rub the warm toast lightly with a cut clove of garlic.
  3. Cut the meat into small cubes with a sharp knife. Finely chop the shallots, capers, and pickles.
  4. Mix the meat with shallot, capers, pickles, mustard, Worcestershire sauce, olive oil, lemon juice, salt, and pepper. Taste and adjust seasoning.
  5. With a spoon, form 4 long tartare strips, about the size of the toast.
  6. On each plate, place two toast strips diagonally next to each other, leaving a clear gap (the pause). Spoon a strip of tartare onto each toast, so they form a broken row.
  7. Make a small well in each tartare strip and place half an egg yolk on top as a 'stamp'.

Serving notes

  • Serve with extra lemon wedges for more tang.
  • Arrange the toasts in a straight row, leaving a deliberate empty space: the pause is visible.
  • Sprinkle extra black pepper for added sharpness.
