Waiting Ships Salad

Long canal-shaped salad with zucchini ships and onion locks, tangy and sharp like the tension at the Panama Canal.

A long salad shaped like the Panama Canal, with a blue dressing as water and sharp, tangy vegetables. Grilled zucchini slices as cargo ships, red onion rings as locks. The tension comes from lime and chili.

Ingredients

  • 1 large zucchini
  • 1 red bell pepper
  • 2 red onions
  • 200 g cherry tomatoes
  • 1 cucumber
  • 1 lime
  • 1 tbsp red wine vinegar
  • 4 tbsp olive oil
  • 1 tbsp capers
  • 1 small red chili pepper
  • 75 g arugula
  • 50 g feta cheese
  • salt and pepper

Method

  1. Slice the zucchini into thick rounds. Brush with olive oil, salt, and pepper. Grill on both sides until marked.
  2. Cut the red onions into rings. Slice the bell pepper into strips, the cucumber into long ribbons with a peeler, and halve the cherry tomatoes.
  3. Slice the chili pepper into thin rings. Crumble the feta.
  4. Make a dressing with lime juice and zest, red wine vinegar, 2 tbsp olive oil, capers, salt, and pepper. Whisk well.
  5. Take a long rectangular platter. Lay the cucumber ribbons in a wide strip down the center as water.
  6. Arrange the grilled zucchini slices as 'ships' in a row along the cucumber strip. Alternate with red onion rings as locks.
  7. Scatter bell pepper, cherry tomatoes, and arugula on the sides as 'land'.
  8. Drizzle the dressing over the canal section. Sprinkle with chili and feta for extra tension.
  9. Serve immediately.

  • Serve on a long platter for the canal effect.
  • Let everyone pick their own 'ship' with a fork.
  • Offer extra lime wedges for those who want more tang.
