Diagonally arranged vegetables form a water cannon, as sharp and tangy as the protest itself.

Long, diagonally arranged vegetables represent the water cannon used by police to disperse the crowd. The ratatouille is sharp and tangy, with contrasting flavors reflecting the protest's tension. The water cannon silhouette is clear, formed by rows of courgette, aubergine, and pepper, with a 'spray' of thin onion slices.

Ingredients

  • 1 courgette
  • 1 aubergine
  • 2 red bell peppers
  • 2 yellow bell peppers
  • 2 red onions
  • 3 cloves garlic
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp coarsely ground black pepper
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 can diced tomatoes (400 g)
  • Salt to taste

Method

  1. Preheat the oven to 200°C.
  2. Slice the courgette and aubergine into long, diagonal slices about 1 cm thick.
  3. Cut the bell peppers into wide strips.
  4. Slice the onions into thin rings, reserving 1 onion for the 'spray'.
  5. Roughly chop the garlic.
  6. Mix courgette, aubergine, peppers, 1 onion, garlic, olive oil, red wine vinegar, pepper, thyme, oregano, and salt in a bowl.
  7. Spread the vegetable mixture on a baking tray. Roast for 30 minutes until soft and lightly browned.
  8. Meanwhile, heat the diced tomatoes in a pan with some salt and extra pepper.
  9. Remove vegetables from the oven. Arrange on a platter in the shape of a water cannon: stack the longest courgette and aubergine slices diagonally, build the 'cannon' with peppers and courgette, place the reserved onion rings at the tip as a 'spray'.
  10. Spoon some of the warm tomato sauce beside for extra color and sharpness.

Serving notes

  • Serve on a long platter so the water cannon shape is clear.
  • Sprinkle extra black pepper over the 'spray' just before serving.
  • Serve with baguette to 'cool down' the tension.
