Yalu Bridge Tartare

Based on:

TypeStarter

DateOctober 15, 2026

Neatly stacked salmon and cucumber strips form a bridge on your plate: an opening between flavors and countries.

A sleek starter of long-cut salmon and cucumber, laid across a soy dressing mirror as the New Yalu River Bridge. The row of salmon and cucumber forms a clear bridge profile: solemn, clean, unmistakably a bridge. Perfect for the border-opening news.

Ingredients

  • 300 g fresh salmon fillet (sashimi-grade)
  • 1 large cucumber
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp honey
  • 1 tsp black and white sesame seeds
  • 4 sprigs chives
  • salt and pepper to taste

Method

  1. Cut the salmon into long, straight strips about 1 cm wide and 10 cm long.
  2. Wash the cucumber, cut lengthwise into quarters and remove the seeds. Cut the strips about the same length as the salmon.
  3. Mix the soy sauce, rice vinegar, sesame oil, and honey into a dressing.
  4. On each plate, make a broad stripe of the dressing as a river.
  5. Lay alternating strips of salmon and cucumber across the river to form a sleek, four-lane bridge.
  6. Sprinkle with sesame seeds and chopped chives.
  7. Season with salt and pepper.

Serving notes

  • Serve on rectangular plates for the bridge effect.
  • Place the strips tightly next to each other, with no gaps.
  • Garnish with extra chives as 'traffic' on the bridge.
